Favorite Fall Recipes

Now that the weather is colder and the leaves are falling it is time to break out the fall recipes!  Here are a couple of my favorites.  ~Sara


Chicken Wings
1 bag of frozen chicken wings & drumettes
1 bottle of soy sauce  (if you don't like soy, pick a favorite BBQ sauce)

Spray cookie sheet with cooking spray. Preheat oven to 200 degrees. Place chicken on cookie sheet and pour half the sauce over the top. Bake for 2 hours then flip chicken and pour remaining sauce over chicken. Cook another 2 hours. **Make sure the chicken stays in some liquid and never totally dries out. Enjoy!

Chicken Tortilla Soup
4 uncooked boneless, skinless chicken breast halves
2 15-oz. cans black beans, undrained
2 15-oz. cans Mexican stewed tomatoes, or Rotel tomatoes
1 cup salsa (mild, medium, hot, whichever you prefer)
4-oz. can chopped green chilies, undrained
141/2-oz. can tomato sauce
tortilla chips
grated cheese

Combine all ingredients except chips and cheese in large slow cooker. Cover. Cook on low 8 hours. Just before serving, remove chicken breasts and slice into bite-sized pieces. Stir into soup. Serve with chips and cheese for toppings.

I've been known to start with frozen chicken breasts. You can prepare in the morning and have supper with no effort. (The rotel tends to make the soup more spicy. I use one can of rotel and one of diced tomatoes.)

Pumpkin Dip
8oz. whipped cream cheese
1 c. powedered sugar
1 can pumpkin
1 T. Cinnamon
1 T. pumpkin pie spice

Combine ingredients and blend well.  Serve with graham cracker pieces or nilla wafers!  Delish!
